The diabetes recipe for today is Udon Noodles with Tofu.
This healthy Asian-inspired dish has low glycemic index that does not affect the blood sugar level of diabetic patients.
Ingredients for Tofu Noodles:
½ cup sliced green onions
1 large carrot cut in bite-sized pieces
1 ½ cups chopped cucumber
2 8 oz plain firm tofu cut into ½ inch pieces
8 oz dried whole wheat udon noodles
Ingredients for Soy Vinaigrette:
¼ tsp crushed red pepper
1 tsp fresh ginger, grated
4 cloves garlic, minced
2 tsp low-sodium soy sauce
1 tbsp toasted sesame oil
2 tbsp rice vinegar
Directions:
1)       Cook the noodles based on package instructions. Cool and set aside.
2)     In a large bowl, combine the tofu, cucumber, green onions and carrots.
3)      Add to the drained pasta and toss to mix the ingredients well. Set aside.
4)     To make the ginger soy vinaigrette, whisk together the sesame oil, vinegar, soy sauce, ginger, garlic and crushed red pepper.
5)     Drizzle the vinaigrette to the pasta.
