The diabetes recipe for today is Sesame Ginger Beef Stir Fry.
This is another tasty yet healthy beef dish that any diabetic patient will love to have without fearing for the rise in their blood sugar level.
Ingredients:
1 tsp toasted sesame seeds
1 1/3 cups brown rice, cooked
1 medium red sweet pepper, cut into bit-sized strips
2 cups broccoli flowers
1 medium onion, sliced
2 tsp sesame oil
1/8 to ¼ tsp crushed red pepper
1 tsp ground coriander
2 cloves minced garlic
1 tbsp cornstarch
1 tbsp fresh ginger, grated
1 cup low-sodium chicken broth
12 oz boneless beef sirloin steak
Directions:
1)       Partially freeze the beef to make it easier to slice. Slice the meat across the grain and set aside.
2)     In a small bowl, mix together ginger, chicken broth, garlic, cornstarch, crushed red pepper and coriander. Set aside.
3)      In a skillet, heat sesame oil over medium heat and sauté onion for 2 minutes. Add the broccoli flowers and sweet pepper and cook for 2 more minutes until the vegetables become crisp and tender. Remove from the skillet.
4)     In the same skillet, add the beef strips and cook for 3 minutes or until the meat is medium rare.
5)     Add the sauce to the wok and cook until it thickens. Return the vegetables and stir to coat with the sauce.
6)      Serve with brown rice and sprinkle with sesame seed.
