The diabetes recipe for today is Sesame Beef Kabobs.
Who says that diabetic patients cannot eat beef? This beef kabob recipe is a great source of protein for diabetic patients. It is made healthier because of the low sodium and fat-free ingredients used in the recipe.
Ingredients:
Sesame seeds
30 pieces cherry tomatoes
¾ cup fresh pea pods, trimmed
4 limes cut into 8 wedges
2 small orange or red sweet peppers, quartered
½ tsp crushed red pepper
½ tsp sesame seeds
2 cloves minced garlic
1 ½ tsp dry sherry (optional)
1 ½ tsp coco sugar
1 green onion, sliced
2 tbsp sesame oil
2 tbsp low-sodium soy sauce
12 oz beef flank steak, fat trimmed
Directions:
1)       Score the sides of the beef by making shallow diagonal cuts across the meat. Place it in a re-sealable plastic bag.
2)     In a small bowl, mix together sesame oil, soy sauce, sugar, green onion, sherry, garlic, sesame seeds and crushed red pepper. This will be the marinade.
3)      Pour the marinade over the meat and seal the bag. Refrigerate for 4 to 24 hours.
4)     Drain the meat and discard the marinade.
5)     Place the meat on the rack and grill directly over medium coals for 14 minutes or until tender. Add the sweet pepper and lime wedges to the grill and grill for another 4 minutes.
6)      In a small saucepan, cook the peas in boiling water for 4 minutes. Drain and set aside.
7)      Thread the meat pieces, sweet pepper, pea pods and tomatoes to skewers. Sprinkle with sesame seeds and serve with lime wedges.
