Ingredients:
• 400 g /14oz sliced fresh carrots
• 1 sliced leek
• 1 tbsp of grated fresh ginger
• 2 ½ pt. of home-made vegetable
• stock
• 1 tsp. of butter

Directions:
Getting more vitamin A might benefit your health if you have a few pounds to lose. Those who are overweight tend to have low levels of
vitamin A in their tissue. Since your cells need vitamin A to function properly, not having enough might prevent your cells and tissues from working at an optimal level.

Directions:
1. Let the butter melt in a large saucepan and add sliced carrots, leek and grated ginger. Roast until golden brown.
2. Add the 2 ½ pints of the homemade vegetable stock and bring to a boil.
3. Once boiling, reduce the heat and simmer for about 15 minutes.
