The diabetes recipe for today is Citrus Sherbet.
This healthy sherbet recipe is jam packed with Vitamin C and antioxidants. It is a healthy dessert that will not affect the blood sugar levels of a diabetic patient.
Ingredients:
¼ cup lime juice
1 tsp shredded lime peel
1 cup buttermilk
4 cups orange juice
1 envelope unflavored gelatin
1 cup coco sugar
Directions:
1)       In a saucepan, mix the coco sugar and unflavored gelatin and add in 2 cups of orange juice. Cook and stir until the gelatin and sugar dissolve. Remove from heat and add the remaining orange juice. Add the lime peel, juice and buttermilk.
2)     Transfer the mixture to a rectangular baking dish and freeze for 4 or five hours until firm.
3)      Break the mixture into chunks and transfer in a chilled bowl. Beat with an electric mixer for 2 minutes until smooth yet not melted.
4)     Return to the container and freeze for 4 hours.
5)     Serve chilled.
