The diabetes recipe for today is Slow Cooker Rosemary Chicken.
This recipe is a great source of lean protein for people with diabetes. This recipe can be substituted with turkey of fish.
Ingredients:
Lemon wedges (for garnishing)
1 tbsp cold water
1 tbsp cornstarch
½ tsp ground black pepper
1 tsp lemon peel, shredded
2 tsp dried rosemary, crushed
½ cup low-sodium chicken broth
½ cup chopped onion
12 cloves garlic
19 oz packaged frozen artichoke hearts
1 ½ lbs skinless and boneless chicken breasts
Directions:
1)       Coat the skillet with cooking spray and heat over medium flame. Brown the chicken breasts in the skillet.
2)     In a slow cooker, combine the onion, garlic and artichoke hearts.
3)      In a small bowl, mix together the broth, lemon peel, rosemary and pepper. Pour this mixture over the vegetables in the slow cooker.
4)     Add the browned chicken.
5)     Cover and cook for 7 hours. Serve warm.
