The diabetes recipe for today is Lemon-Lavender Frozen Yogurt.
This fat-free yogurt recipe is not only delicious and healthy but it also has a unique smell to it thanks to the lavender flowers it contain.
Ingredients:
Fresh sprigs of lavender (for garnishing)
Fresh lemon slices
Shredded lemon peel
½ cup lemon juice
4 cups fat-free vanilla yogurt
2 tsp dried lavender flowers
½ cup fat-free half and half
Honey to taste
Directions:
1)       In a small bowl, bring the half and half to a boil. Remove from heat and add the dried lavender flowers. Set aside and let it stand for 30 minutes.
2)     In a bowl, mix together yogurt, 2 tablespoons of lemon peel, juice, honey to taste and lavender. Cover and chill for at least an hour.
3)      Combine all ingredients together and chill in a 2 quart ice cream maker.
4)     Serve with lavender and lemon peel.
