Diabetes Recipes – Oat Bran Pancakes

The diabetes recipe for today is Oat Bran Pancakes.
This is a delicious pancake recipe that you can make. It is rich in fiber that will make you feel full for a long time.
Ingredients:
Orange wedges (for garnish)
1 tsp shredded orange peel
½ cup sugar free pancake syrup (optional)
Non-stick cooking spray
2 egg whites
1 tablespoon olive oil
1 cup fat-free milk
1/8 tsp salt
2 tsp baking powder
1 tbsp brown sugar
2/3 cup oat bran
1/3 cup all-purpose flour
1) In a mixing bowl, combine the flour, brown sugar, oat bran, and salt. Add the oil and milk until the mixture is well combined.
2) In another bowl, beat the egg whites using an electric mixer until stiff peaks form. Fold into the batter gradually.
3) Coat
a non-stick skillet with cooking spray and heat over medium heat. Spoon
¼ cup of the batter on the skillet and form a flat circle. Cook for 2
minutes on each side until golden brown.
4) In another saucepan, heat the syrup and add the orange peel.
5) Pour the sauce over the pancakes and add orange wedges. Serve warm.
