This
breakfast quesadilla recipe is a great breakfast on the go. It is
loaded with fiber and vegetables that is good for the body.
Ingredients:
1 cup chopped tomatoes
2 tbsp black beans, boiled until soft
2 tbsp skim mozzarella cheese
1 whole wheat flour tortilla
1/8 low-sodium chipotle seasoning
¼ cup egg whites
1) Preheat
a non-stick skillet over medium heat and add the egg whites. Sprinkle
with the chipotle seasoning. Cook without stirring until the egg whites
begins to set. Use a spatula and lift the eggs and fold it in half.
Continue cooking for a minute.
2) Spoon
the cooked egg on one side of the tortilla. Top with cheese, beans and
tomatoes. Fold the tortilla over the filling and press gently.
3) In the same skillet, heat the tortilla until the tortilla so that the filling is cooked through.
